Here is one of our original recipes you might like to try:

CHEESE ENCRUSTED OMELETTE

Very hearty with a crispy outside... cheese lovers will want it again and again.  Serve with toast and fresh sliced tomatoes or fruit of your choice.  Enjoy!

4 eggs
2 tbsp. butter
1/4 c. diced ham (or cooked bacon/sausage)
2 tbsp. diced green onion
2 tbsp. diced green pepper
Small handful shredded cheddar cheese
3 slices American cheese (or other cheese of your choice)
Salt and pepper to taste

Beat eggs, salt and pepper in a small bowl. Brown ham in butter in 12 non-stick frying pan on medium high.  Add green pepper and green onion and sauté lightly.  Remove to a paper plate.   Sprinkle bottom of the same pan with shredded cheddar cheese.  Once cheese has melted, pour in egg mixture.  Then, add a layer of American cheese and sautéed ingredients.  Cook uncovered until eggs are set.  Fold in half and divide into two portions.
